Top 10 Spices in your Pantry?

You all know I moved and in packing up my house, I realized that some of the spices I had in my cabinets were a million years old.  OK – well maybe not a million, but you get the idea.  So before I ran out spending a fortune on new spices, I figured I would do some research on what the MUST HAVE spices are.  I like to cook, but my family eats a lot of basics, so I asked Erin the author/blogger of 5DollarDinners what are the Top 10 MUST HAVE spices for your pantry.

She created a great list and her readers are adding even more in the comments.  So I want to know what yours are as well.  PLEASE share your top 10 spices and your storage ideas as well.  Do you buy bulk?  Do you have a spice cabinet or rotating thing on the counter?  HELP ME!!!  Let me know if you have a spice organization system that you love.

Thanksgiving Meal

To brine or not to brine: that is the question: Whether ’tis nobler in the mind to suffer
The sneers and snickers of a dried out turkey,
Or to take arms against a sea of troubles,

That is the famous question posed by Hamlet – OK maybe not exactly that way.  But seriously, do you brine your turkey or what other methods do you use to keep it moist and give it flavor?

I always wanted to brine a turkey, but I will be honest – I could not get past the issue of what to put it in and how to keep it cold.  Then I also heard that the texture can change.  Then last year I found an article about dry brining and I WILL NEVER GO BACK.  To say that my turkey last year was divine is an understatement.  I highly recommend you give it a try – I am doing it again this year.

UPDATE – sorry I meant to include how to… oops – Basically you want to rub the turkey inside and out with 1 TBS Kosher salt (you can add other poultry seasoning, but it is the salt that matters) for every 5lbs of turkey.  Then seal it is a bag and refrigerate.  It is best to have 3 days to do it, but any time is good.  Once per day, massage the juices back into the turkey (just run through the bag).  If you can, you can also flip it over, but it is not critical).  So do that fro 2 – 3 days.  The day before you are going to cook it, unseal the bag and let it dry out in the refrigerator.

On cooking day – thoroughly RINSE the bird and prepare as usual.  Sometimes this is when I add the poultry seasoning – but do not add more salt!

Now I may totally suck (excuse the language, but there really is no other word, stink just does not cut it) at regular meal planning, but holidays – LOVE planning those.  My only issue is I take on too much and try way too many new recipes.  This Thanksgiving will follow suit.  Here is my proposed Thanksgiving menu in addition to my divinely dry brined turkey:

  • Stuffing – still debating recipes – LOL!
  • Cole Slaw

Others will bring desserts but I may try Pumpkin Chocolate Chip Cookies from Erin at 5 Dollar Dinners.

Holiday 2010 Once A Month Mom eCookbook 40% off!

Better Breakfast eBook $3.97

In my quest to eventually be a better cook, I follow a few cooking blogs.  One of my favorites is Cooking During Stolen Moments.  Kate’s recipes look so yummy.  I have tried a few and have a ton bookmarked for when I truly commit to myself and my family to prepare better food – more coming on that later.

Menu Plan Monday 2/22

How did you all do on your menu plans last week.  IT WAS A HORRENDOUS week for me!  Hubby worked OT all week and the kids and I were sick.  I even ruined my first meatloaf last night.  My family LOVES my meatloaf, but I went to make it and had no Worceshire sauce and was thrown off my game.  I am hoping to be better this week, but my plan is awful at this point.  Let’s see what I can pull together.

I am hoping to pull together some recipes so What’s in Your Crockpot??  I love this idea.  I am always looking for new recipes and SmockityFrocks is hosting a corck pot recipe link-up today!  That means I will be doing some research and modifying my plan for this week – so exciting.  I want to try to use my crockpot at least once/week.  Do you use your crockpot a lot?

HERE is my very ROUGH draft:

MONDAY – Breakfast for dinner (I have bacon to use up so eggs & bacon it is!!)

TUESDAY – Chicken (maybe crockpot??)

WEDNESDAY – pasta

THURSDAY – ?? maybe pizza, busy night

FRIDAY – Chicken Spaghetti – cannot wait to try this one!!

SATURDAY – LATE B-day Celebration for Z – so what ever he wants!

SUNDAY – Turkey Breast dinner – I am going to start dry brining it on Wed!!)

Menu Plan Monday 2/8

Menu Plan MondayFirst of all I have to start this week off with a huge WAY TO GO!! for myself.  I hit 6 out of 7 of my meal plan last week.  You have no idea what a big accomplishment this is.  The mac-n-cheese with carrots was actually a hit – accept for my 5 year old who said it was too creamy.  It was funny because her token response is it is too sweet for her – LOL!

My roast beef dinner was divine!  Remember I told you about how I dry brined my Thanksgiving turkey?  It was literally mouth watering and crazy good.  So I wanted to see if you could do this with beef.  You can, but I did not do it as long.  18-24 hours before cooking, rub the meat with salt and pepper and lightly wrap in the refrigerator.  Then I cooked it at 325 for 25 minutes/lb.  OMG was it good!

As promised, when I guest posted last week, I shared some great menu planning resources – some I have shared before, but they are worth repeating:

  • OrgJunkie is the home of Menu Plan Monday. Every Monday, blogger link their weekly menus including recipes. If you ever need ideas, check it out. She also lists 13 reasons for menu-planningwhich include saving money and saving time – my 2 favorite things!
  • FistfulofCoupons has a wonderful post again reiterating the importance of meal-planning. What I LOVE about her method is her monthly meal plan. This form allows you to choose certain categories and list 4-5 meals under each one. Then you just plug these into a rotating schedule for your weekly plan. This will be a big help as I sit in front of a blank weekly plan with no ideas of what to have.  I told you about this a couple week ago, BUT they created a blank form to download!!  WOO HOO!
  • $5 Dinners is a fantastic blog by Erin Chase who you may have heard of recently with the release of her NEW cookbook! All of her recipes can be made for under $5!! I especially liked her Stock Your Freezer recipes.

Some day I may try Once-A-Month cooking, or Freezer cooking or Eating from the Pantry. I personally am not ready for that… YET! I am working on writing down the plan and holding myself accountable to it.  And actually I am NOT prepared this week, but here goes:

MONDAY:  Chicken and rice

TUESDAY:  Gnocci and rolls 

WEDNESDAY: Hot Dogs (rolls are on sale for $1 this week!) and fries

THURSDAY: Steak and roasted potatoes

FRIDAY:  leftovers??

SATURDAY: DATE NIGHT – I hope!?!

SUNDAY: Pork, Pinapple & Potatoes (a.k.a. PPP)
