First of all I have to start this week off with a huge WAY TO GO!! for myself. I hit 6 out of 7 of my meal plan last week. You have no idea what a big accomplishment this is. The mac-n-cheese with carrots was actually a hit – accept for my 5 year old who said it was too creamy. It was funny because her token response is it is too sweet for her – LOL!
My roast beef dinner was divine! Remember I told you about how I dry brined my Thanksgiving turkey? It was literally mouth watering and crazy good. So I wanted to see if you could do this with beef. You can, but I did not do it as long. 18-24 hours before cooking, rub the meat with salt and pepper and lightly wrap in the refrigerator. Then I cooked it at 325 for 25 minutes/lb. OMG was it good!
As promised, when I guest posted last week, I shared some great menu planning resources – some I have shared before, but they are worth repeating:
- OrgJunkie is the home of Menu Plan Monday. Every Monday, blogger link their weekly menus including recipes. If you ever need ideas, check it out. She also lists 13 reasons for menu-planningwhich include saving money and saving time – my 2 favorite things!
- FistfulofCoupons has a wonderful post again reiterating the importance of meal-planning. What I LOVE about her method is her monthly meal plan. This form allows you to choose certain categories and list 4-5 meals under each one. Then you just plug these into a rotating schedule for your weekly plan. This will be a big help as I sit in front of a blank weekly plan with no ideas of what to have. I told you about this a couple week ago, BUT they created a blank form to download!! WOO HOO!
- $5 Dinners is a fantastic blog by Erin Chase who you may have heard of recently with the release of her NEW cookbook! All of her recipes can be made for under $5!! I especially liked her Stock Your Freezer recipes.
Some day I may try Once-A-Month cooking, or Freezer cooking or Eating from the Pantry. I personally am not ready for that… YET! I am working on writing down the plan and holding myself accountable to it. And actually I am NOT prepared this week, but here goes:
MONDAY: Chicken and rice
TUESDAY: Gnocci and rolls
WEDNESDAY: Hot Dogs (rolls are on sale for $1 this week!) and fries
THURSDAY: Steak and roasted potatoes
FRIDAY: leftovers??
SATURDAY: DATE NIGHT – I hope!?!
SUNDAY: Pork, Pinapple & Potatoes (a.k.a. PPP)
